Lemon Ginger Sauce

This sweet and sour sauce is great on soy curls, seitan bites, tofu and any other meaty substitute that could use a little pick-me-up.

Ingredients
  

  • 1/2 cup Vegan beef broth (or vegetable stock)
  • 1/4 cup Maple syrup (or sub agave or brown sugar)
  • 3 tbsp Rice wine vinegar
  • 3 tbsp Soy sauce
  • 2 cloves Garlic, minced
  • 1 tsp Lemon zest
  • 1/4 cup + 2 tbsp Lemon juice
  • 2 tsp Fresh ginger, grated (hint: store fresh ginger in the freezer and cut/grate off a piece as needed.)
  • 1/8 tsp Cayenne pepper
  • 1/4 tsp Ginger, ground
  • 4 tsp cold water
  • 1 tbsp corn starch

Method
 

  1. In a small bowl, dissolve corn starch in water to create a slurry.
  2. Combine all ingredients, including corn starch slurry, in a small pot on medium heat for 5-7 minutes, stirring frequently, then reduce to low for 3-5 more minutes until sauce begins to thicken. Remove from heat.
  3. Use sauce to cook tofu, soy curls, meat substitutes, vegetables or whatever your heart desires. Store remaining sauce in an airtight container in the fridge for up to one week.
