Melty Vegan Mozzarella

Ingredients
  

  • 1 cup water
  • 1/2 cup cashews (softened if you don't have a high-powered blender)
  • 3 tbsp tapioca starch
  • 2 tbsp nutritional yeast
  • 1 tbsp sauerkraut
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • 1/2 tsp salt

Method
 

  1. Soften cashews in a pot of boiling water for 10 minutes, or soak covered in water overnight, if you don't have a high-powered blender. If you have one, feel free to skip this step
  2. Add all ingredients to blender and blend until perfectly smooth.
  3. Pour liquid mixture into a small pot and heat over medium heat, stirring regularly until it begins to thicken (about 5-7 minutes).
  4. Use on pizzas, pastas, nachos or as a dip!
  5. Store unused portion in an airtight container in the fridge for up to 4 days.
